Sommartårta med cheesecake fyllning och bär- Puff pastry Cake with cheesecakefilling and summer berries
inally its time for five whole glorious weeks of vacation and it needs to be celebrated with cake!
For the filling I have used something that is common here in Sweden, its a vanilla flavored cream that you whip into a fluffy sauce thing.. Don't know if its common elsewhere but it can be substituted with regular heavy cream and some vanilla extract
Puff pastry Cake with cheesecakefilling and fresh berries
2 thawed sheet of puff pastry
1 tbs sugar
1 egg lightly whipped
1 tsp cinnamon
1 tsp cardamom
Roll out the puff pastry on a baking sheet. Brush it with the egg wash and sprinkle the sugar, cinnamon and cardamom over. Bake at 400 f for about 15-20 minutes or until puffpastry is golden in color.
Let cool.
Cheesecake filling
300 grams of Philadelphia cream cheese
1 cup of vanilla flavored cream
½ cup of icing sugar
1 tsp lemon zest.
Assorted fresh berries as raspberries, cherries, strawberries, blueberries
Whip the cream cheese together with the icing sugar and lemonzest until creamy.
In another bowl whip the vanilla cream until fluffy.
Fold in the cheese mixture into the cream and pour onto cooled pastry and smooth with a small spatula. Add berries and add the second layer and repeat. Done.
